Welcome to issue #107 of The Pan Note! This month, we have plenty of cool stuff in store for you, starting with the results for PNTM Cycle Three! Head on over to Headlines if you haven't read the results of the year's biggest forum competition yet. While you're in that section, you may want to also check out news about a returning mod - everyone's favorite veteran moderator has made a grand return to the Panboards!

We're very happy to announce that in this month's Noted, we have new Pandect Talk links. It appears that things are picking up in the more higher tier areas of the forum and the Eds are definitely happy to see that. The forum has also seen some Cherokees arriving and some oldbies returning. If you haven't said hi to all the new folks yet, you can find the place where to do so in Noted, as well.

We have some new art and a fan-favorite fic series has reached its climax - more on those can be found from Fresh Links. If you're in the mood for something so delicious it's almost bordering on sinful, do take a peek into Chareply, where another fan-favorite series is continuing. Oh, and guess what? New Official Panfacts will be posted in every issue of The Pan Note at least until the end of the year! Please check in each month for more Pandect trivia! ^^

Before we go and let you continue with the actually important parts of the Note, we have three Panbirthdays in the upcoming month that deserve a mention. The first one is actually today and the ones celebrating it are Helen and our very own editor Virgie! The next Panbirthday isn't too far away as Rose turns a year older on the 23rd. The final big day is on October 13th, when it is Cherokee's birthday. Congratulations to all of you!

Congrats Virgie and VV for winning the Pandect Next Top Model, Cycle 3!! The Panboard may not be so active right now, but PNTM Cycle 3 has been a successful contest with a lot of interesting pictures from the contestants. This cake sounds absolutely tasty and if you take a look at the photo of it, there's no way you can sit still and not make it.

Hello, Panboarders!

It’s been a while, but today I’ve come to delight your taste buds with the ultimate baked goodie:
Earl Grey Chocolate Cake.

If you’re into cake, chocolate, and tea, you won’t need any further information to know why this is the cake you want to be baking this weekend! Of course it’s great with coffee, too.

What you need:
  • 180g dark chocolate, chopped
  • 140g unsalted butter, diced
  • 5 eggs, separated
  • 200g, sugar
  • 1 teaspoon baking powder
  • 2 tablespoons cocoa powder, sifted
  • 1/2 teaspoon salt
  • 1 heaping tablespoon Earl Grey tea, finely ground
  • 90g all-purpose flour

What to do:
Butter an 20 cm spring form pan and line the bottom with parchment paper.

Melt the chocolate and butter together in a double boiler or a glass bowl set over some simmering water. Stir until melted and smooth – be patient about this, make sure nothing burns.

Beat the egg whites until stiff and glossy and then fold in the sugar slowly.

Sift together the cocoa powder, salt, tea, baking powder and flour and set aside.

Beat the egg yolks.

Whisk the chocolate into the egg yolks. If the chocolate is too warm it might cook the eggs so wait until it is a room temperature!

Next fold the chocolate mixture into the egg whites.

Lastly, fold the flour mixture in, taking care not to deflate the whites. The mixture should be wibbly wobbly. Pour into the spring form and bake at 180°C for 35 minutes.

Let it cool on a wire rack and serve with whipped cream, or even ice cream. And some earl grey tea, of course.
